The monitor keeps dropping off the wifi

Usually a signal strength problem. The monitor is out where the plant is, which may be at the edge of your wifi range. Try moving your router, adding a mesh point or extender nearer the garden, or repositioning the monitor. A monitor that drops off still keeps reading soil and working locally, it just cannot report until it reconnects.
