Can the reading go below 0 or above 100

The scale is set by your calibration, so if the soil gets drier than your dry point or wetter than your wet point, the reading sits at the ends rather than going beyond them. If you often hit the ends, your calibration points may be set too close together, recalibrate with a wider dry to wet range.
