The soil looks dry but the reading says the bed is fine

The surface almost always dries first while the soil lower down, where the roots are, stays damp. The probe reads at root depth, which is what the plant actually drinks from, so it can quite rightly say fine while the top looks parched. Trust the probe over the surface.
